AIP MOM’S MEATLOAF

Meatloaf is such a simple and easy dish and also freezes well making it a wonderful choice both for busy weeknight meals and for batch cooking. It’s a filling and nourishing dish that comes with a whole lot of nostalgia and a side comfort. This recipe takes this comfort food classic and reimagines it AIP style. It’s made with grass fed ground lamb, homemade lamb marrow bone broth, and cauliflower flour as the extra-special ingredient. The best part about it, however, is it can easily adapt to substitutions, so feel free to switch things up based on what you have on hand!

AIP MOM’S MEATLOAF RECIPE

Ingredients:

  • 1 lb grass fed ground lamb

  • Approximately 3 oz cup shredded carrot***

  • Approximately 3 oz chopped celery***

  • Approximately 3 oz chopped onion*** (*** = to save time on chopping vegetables, look for frozen organic mirepoix like the 10 oz bag by Cascadian Farm)

  • 1 cup cauliflower flour (or substitute your preferred neutral tasting flour)

  • 1/4 cup arrowroot starch

  • 1 cup olive oil

  • Approximately 1 and 1/4 cup homemade lamb marrow bone broth seasoned only with salt (substitute with store bought broth but make sure to check the ingredients for AIP elimination)

  • 2 tsp salt

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1/2 tsp baking soda

  • Parsley to garnish

Directions:

  • Preheat oven to 400 degrees Fahrenheit

  • Grease two 9 inch loaf pans

  • Mix cauliflower flour, arrowroot, salt, garlic powder, onion powder, and baking soda in a small bowl until combined

  • In a large mixing bowl, combine ground lamb, carrot, celery, onion, olive oil, and bone broth

  • Add the flour mixture to the meat and veggie mixture and combine

  • If more moisture is needed, add additional bone broth

  • Divide mixture evenly across two loaf pans

  • Bake at 400 degrees F about 25 mins until meat thermometer reads 165 degrees Fahrenheit

  • Let cool, slice, and garnish with parsley

  • Enjoy!
